2 whole sea bream, cleaned and scaled (about 1 lb each)

2 lemons (1 sliced into rounds, 1 juiced)

4 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 teaspoon fresh rosemary, chopped

1 teaspoon paprika

1 tablespoon olive oil

2 medium carrots, sliced into thin strips

1 bell pepper (red or yellow), sliced

1 zucchini, diced

1 red onion, cut into wedges

Salt and pepper to taste

Fresh parsley, for garnish

Preheat the Oven: Preheat your oven to 400Β°F (200Β°C).

    Prepare the Fish: Rinse the sea bream under cold water and pat dry with paper towels. Make 2-3 shallow diagonal cuts on each side of the fish to allow the flavors to penetrate.

      Marinate the Fish: In a small bowl, mix the minced garlic, lemon juice, thyme, rosemary, paprika, olive oil, and a pinch of salt and pepper. Rub this mixture generously over the fish, including the inside cavity and into the slits.

        Prepare the Vegetables: In a large bowl, combine the sliced carrots, bell pepper, zucchini, and red onion. Drizzle with olive oil, season with salt and pepper, and toss to combine.

          Arrange on Baking Sheet: On a large baking sheet, arrange the marinated fish in the center. Surround the fish with the seasoned vegetables and place lemon slices over the top of the fish.

            Roast: Roast in the preheated oven for 25-30 minutes, or until the fish is cooked through (the flesh should flake easily) and the vegetables are tender.

              Serve: Remove from the oven and let rest for a few minutes. Serve warm, garnished with fresh parsley.
