Ingredients
  

1 lb shrimp, peeled and deveined

1/2 cup cornstarch

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 cup panko breadcrumbs

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust for spice preference)

1 tablespoon lime juice

8 small corn or flour tortillas

1 cup cabbage, shredded

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prep the Shrimp: In a large bowl, toss the shrimp with cornstarch, garlic powder, paprika, cayenne pepper, salt, and pepper until all shrimp are evenly coated.

    Breading Process: In a shallow dish, add the panko breadcrumbs. Take each shrimp from the cornstarch mixture and dredge it in the panko, pressing gently to adhere. Set aside on a plate.

      Prepare the Sauce: In a separate bowl, mix the mayonnaise, sweet chili sauce, Sriracha, and lime juice until well combined. Adjust the spice level to your liking.

        Air Fry the Shrimp: Preheat the air fryer to 400°F (200°C). Lightly spray the fryer basket with cooking spray. Place the breaded shrimp in a single layer in the basket (you may need to do this in batches). Spray the shrimp lightly with cooking spray to help them crisp up. Cook for 8-10 minutes, shaking the basket halfway through, until golden brown and cooked through.

          Assemble the Tacos: While the shrimp cooks, warm the tortillas in a dry skillet over medium heat until they are pliable.

            Build the Tacos: Place a handful of shredded cabbage on each tortilla, top with the crispy Bang Bang shrimp, and drizzle with the sauce.

              Garnish & Serve: Top with fresh cilantro and serve with lime wedges on the side for squeezing over the tacos.
