2 cups cooked and cooled jasmine rice

1 cup mixed vegetables (peas, carrots, corn)

2 eggs, beaten

3 green onions, chopped

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

In a large bowl, combine the cooled jasmine rice, mixed vegetables, garlic powder, ginger powder, soy sauce, and sesame oil. Mix well.

    Preheat your air fryer to 380°F (193°C) for 3 minutes.

      Place half of the rice mixture into the air fryer basket and flatten it out evenly. Air fry for 10 minutes, shaking the basket halfway through for even cooking.

        While the rice is cooking, scramble the beaten eggs in a non-stick skillet over medium heat until fully cooked. Set aside.

          Once the first batch of rice is done, remove it from the basket and transfer to a large bowl. Repeat with the second half of the rice mixture and air fry for another 10 minutes.

            After the final batch is cooked, combine all the rice in the bowl, add the scrambled eggs, and toss gently. Stir in the chopped green onions.

              Season with salt and pepper to taste.
