In a bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil until well combined.
Place the salmon fillets in a shallow dish and pour the marinade over the fish. Marinate for at least 30 minutes, allowing the flavors to penetrate.
After marination, remove the salmon from the dish, reserving the marinade.
Preheat your air fryer to 375°F (190°C).
In a small saucepan, heat the reserved marinade over medium heat until it comes to a simmer. Mix the cornstarch and water in a small bowl, then stir it into the simmering sauce. Cook for about 2-3 minutes, until thickened, then remove from heat.
Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the salmon fillets in the basket, skin-side down.
Air fry the salmon for 10-12 minutes, or until cooked to your liking and flaky in texture.
After cooking, brush the thickened teriyaki sauce over the salmon fillets for added flavor.
Garnish the salmon with sesame seeds and chopped green onions before serving.
