2 cups almond flour

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1/4 cup coconut oil, melted

1/4 cup maple syrup

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (dairy-free if desired)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a mixing bowl, combine the almond flour, baking soda, and sea salt. Whisk until well combined.

      In a separate bowl, mix together the melted coconut oil, maple syrup, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and stir until a dough forms. If using, fold in the dark chocolate chips and chopped nuts.

          Scoop tablespoon-sized balls of dough and place them about 2 inches apart on the prepared baking sheet. Gently flatten each ball with the palm of your hand.

            Bake in the preheated oven for 10-12 minutes or until golden brown around the edges. Keep an eye on them to ensure they don’t overbake!

              Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
