Ingredients

1 pound breakfast sausage, crumbled

6 large eggs

2 cups milk

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

8 slices of bread, cubed (preferably day-old or country bread)

2 cups shredded cheddar cheese

1 cup diced bell peppers (red and green)

1 cup diced onion

Optional: fresh herbs (such as parsley or chives) for garnish

Instructions

Preheat your oven to 350°F (175°C). Grease a large 9x13-inch baking dish with cooking spray or butter.

In a large skillet over medium heat, cook the crumbled breakfast sausage until browned and cooked through, about 7-10 minutes. Drain excess grease if necessary.

In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.

Layer the cubed bread in the greased baking dish, followed by the cooked sausage, diced bell peppers, chopped onions, and 1 1/2 cups of the shredded cheddar cheese.

Pour the egg mixture evenly over the layered ingredients in the baking dish. Use a spatula to gently press the bread down so it absorbs the egg mixture.

Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and the edges are golden brown.

Once done, remove from the oven and let it cool for about 10 minutes. Garnish with fresh herbs if desired before serving.
