2 cups elbow macaroni

1 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon sugar

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup diced celery

1/2 cup diced red bell pepper

1/2 cup diced red onion

1/2 cup frozen peas, thawed

2 hard-boiled eggs, chopped

1/4 cup sweet pickle relish

Instructions
 

Cook the elbow macaroni in a large pot of salted boiling water, following the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    In a large mixing bowl, whisk together mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and black pepper until smooth and well combined.

      Add the cooked macaroni to the bowl along with the diced celery, red bell pepper, red onion, thawed peas, chopped hard-boiled eggs, and sweet pickle relish.

        Gently fold the ingredients together using a spatula or large spoon until everything is evenly coated with the dressing.

          Taste and adjust seasoning if necessary, adding extra salt or pepper as desired.

            Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
