1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup Andes mint chips (or chopped Andes mints)

Optional: powdered sugar for dusting

Instructions
 

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.

    In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Beat in the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.

        In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, mixing just until combined.

            Fold in the semi-sweet chocolate chips and Andes mint chips using a spatula or wooden spoon, ensuring they are evenly distributed throughout the dough.

              Drop tablespoon-sized mounds of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.

                Bake in the preheated oven for 10-12 minutes, or until the edges are firm but the center remains soft.

                  Remove from the oven and let cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

                    If desired, dust with powdered sugar before serving for an elegant touch.
