1 cup all-purpose flour

1 ½ cups egg whites (about 10-12 large eggs)

1 cup granulated sugar

1 tsp vanilla extract

1 tsp cream of tartar

½ tsp salt

½ cup unsalted butter, melted

1 cup cinnamon sugar (1 cup granulated sugar mixed with 2 tbsp ground cinnamon)

Preheat the oven to 350°F (175°C). Line a 9-inch round or square cake pan with parchment paper, leaving some overhang.

    Beat Egg Whites: In a large mixing bowl, use a hand mixer or stand mixer to beat the egg whites on medium speed until frothy. Add cream of tartar and salt, then increase the speed to high and beat until stiff peaks form.

      Add Sugar and Flavoring: Gradually add the sugar, one tablespoon at a time, mixing well after each addition. Then, gently fold in the vanilla extract.

        Incorporate Flour: Sift the flour into the egg white mixture in half, folding gently with a spatula after each addition, ensuring no streaks of flour remain.

          Bake the Cake: Pour the batter into the prepared pan and smooth the top. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

            Cool and Cut: Once baked, remove the cake from the oven and allow it to cool for about 10 minutes in the pan. Using the parchment overhang, lift the cake out and let cool completely on a wire rack.

              Make Churro Bites: Once cooled, cut the angel food cake into bite-sized squares or strips.

                Fry the Pieces: In a deep pot, heat the oil over medium heat until it reaches 350°F (175°C). Carefully add small batches of the cake pieces to the oil and fry until they are golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

                  Coat in Cinnamon Sugar: While the churro bites are still warm, roll them in cinnamon sugar until well coated.

                    Serve: Arrange the churro bites on a platter and serve warm, optionally with a side of chocolate or caramel sauce for dipping.
