2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 cups peeled and diced apples (Granny Smith or your choice)

1 teaspoon cinnamon

For the Cream Cheese Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the eggs, one at a time, mixing well after each addition. Then, incorporate the vanilla extract.

        In another bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix just until blended. Do not overmix.

            In a separate bowl, toss the diced apples with the cinnamon until well coated. Gently fold the apples into the batter.

              In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.

                Pour half of the coffee cake batter into the prepared baking pan. Spread it evenly and create small dollops of the cream cheese mixture over the batter.

                  Pour the remaining batter over the cream cheese filling and spread it evenly to cover it completely.

                    Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted into the center comes out clean.

                      Allow the cake to cool in the pan on a wire rack for at least 15 minutes before serving.
