2 medium-sized apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

2 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1 large egg

1/2 cup milk

1 tsp vanilla extract

1/2 cup powdered sugar (for glaze)

1-2 tbsp milk (for glaze consistency)

Vegetable oil (for frying)

Instructions
 

Prepare the Apples: In a medium bowl, combine the diced apples with 1 tablespoon of granulated sugar and set aside. This will help release their juices and enhance their flavor.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, remaining sugar, baking powder, cinnamon, nutmeg, and salt until fully combined.

      Combine Wet Ingredients: In a separate bowl, beat the egg and then stir in the milk and vanilla extract until well mixed.

        Combine the Mixtures: Pour the wet ingredients into the dry ingredients and mix just until combined. Gently fold in the prepared apples. Don’t overmix; a few lumps are okay.

          Heat the Oil: In a deep skillet or pot, heat about 2 inches of vegetable oil over medium heat. To test if the oil is ready, drop a small spoonful of batter into it; if it bubbles and rises, it’s ready for frying.

            Fry the Bites: Use a small cookie scoop or tablespoon to drop the batter into the hot oil, taking care not to overcrowd the pan. Fry until golden brown on each side (about 2-3 minutes per side). Remove with a slotted spoon and drain on paper towels.

              Prepare the Glaze: In a small bowl, mix the powdered sugar with 1 tablespoon of milk. Add more milk as needed to reach your desired glaze consistency. The glaze should be thick yet pourable.

                Glaze the Fritter Bites: While still warm, drizzle the glaze over the fritter bites or dip them into the glaze for a uniform coating.
