2 medium-sized apples (preferably Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/8 teaspoon nutmeg

1/4 teaspoon salt

1/3 cup milk

1/4 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

Vegetable oil for frying

Powdered sugar for dusting

Instructions
 

Start by heating approximately 2 inches of vegetable oil in a deep skillet or fryer over medium heat until it reaches 350°F (175°C).

    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, nutmeg, and salt until well combined.

      In a separate bowl, mix the milk, applesauce, egg, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.

          Gently fold in the diced apples, ensuring they are evenly distributed throughout the batter.

            Using a spoon or small cookie scoop, carefully drop dollops of batter (about a tablespoon each) into the hot oil. Fry in batches, making sure not to overcrowd the pan.

              Fry the fritter bites for about 2-3 minutes per side, or until they are golden brown and puffed up. Use a slotted spoon to turn them while frying.

                Once cooked, remove the fritter bites from the oil and place them on a paper towel-lined plate to absorb excess oil.

                  While still warm, dust the fritter bites generously with powdered sugar for a sweet finish.

                    Serve warm and enjoy the delicious bites of apple fritter goodness with a drizzle of caramel sauce or a scoop of vanilla ice cream if desired!
