2 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/4 cup powdered sugar (for dusting)

Prepare the Apples: Start by peeling, coring, and dicing the apples into small cubes (about 1/4 inch). Set aside.

    Make the Batter: In a medium mixing bowl, combine the flour, granulated sugar, baking powder, ground cinnamon, and salt. Whisk together until well blended.

      Mix Wet Ingredients: In another bowl, whisk together the milk, egg, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Be sure not to overmix; a few lumps are okay. Gently fold in the diced apples.

          Heat the Oil: In a deep skillet or pot, pour in about 2-3 inches of oil and heat over medium-high heat until it reaches 350°F (175°C).

            Fry the Bites: Using a tablespoon or small cookie scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in small batches to avoid overcrowding. Cook each batch for about 3-4 minutes, or until golden brown and puffed.
