2 medium-sized apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

3/4 cup buttermilk

1 large egg

1 teaspoon vanilla extract

Vegetable oil (for frying)

1 cup powdered sugar (for glazing)

2 tablespoons milk (for glazing)

Additional cinnamon (optional, for sprinkling)

Prepare the Apples: Peel, core, and dice the apples into small cubes. Set them aside in a bowl.

    Mix Dry Ingredients: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, and vanilla extract until smooth.

        Create the Batter: Pour the wet ingredients into the dry ingredients and stir gently. Do not overmix; the batter should be slightly lumpy.

          Add Apples: Fold the diced apples into the batter until they’re evenly distributed.

            Heat the Oil: In a deep frying pan or pot, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C). You can use a thermometer for accuracy.

              Fry the Bites: Once the oil is hot, drop tablespoonfuls of the batter into the oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side until golden brown.

                Drain and Cool: Use a slotted spoon to remove the fritter bites from the oil and place them on a paper towel-lined plate to absorb excess oil.

                  Glaze the Fritter Bites: In a small bowl, whisk together powdered sugar and milk until smooth. If you'd like, add a pinch of cinnamon for extra flavor. Dip each fritter bite into the glaze and place them on a cooling rack.

                    Serve: Allow the glaze to set for a few minutes, then serve warm, optionally dusting with a little more cinnamon.
