Ingredients
  

2 medium apples (such as Granny Smith or Honeycrisp), cored and sliced into 1/4-inch rings

1 cup all-purpose flour

1 tablespoon baking powder

1 tablespoon sugar

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter (plus more for the pan)

Maple syrup, for serving

Chopped walnuts or pecans, for garnish (optional)

Instructions
 

In a medium bowl, mix together the flour, baking powder, sugar, cinnamon, and salt.

    In a separate bowl, whisk together the milk, egg, and melted butter until combined.

      Gradually add the wet ingredients to the dry ingredients, stirring just until combined. The batter should be slightly lumpy—it’s okay if there are a few small flour pockets.

        Preheat a skillet or griddle over medium heat and add a small amount of butter to grease the surface.

          Once the skillet is hot, dip each apple ring into the pancake batter so that it is thoroughly covered.

            Place the battered apple ring onto the skillet and cook for about 2-3 minutes until bubbles form on the surface of the pancake.

              Carefully flip the pancake and cook for another 2-3 minutes on the other side until golden brown.

                Repeat with the remaining apple rings, adding more butter to the skillet as needed.

                  Serve warm with a drizzle of maple syrup and sprinkle with chopped walnuts or pecans if desired.
