Ingredients

200g spaghetti

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes

1 medium zucchini, spiralized

1 cup cherry tomatoes, halved

1 cup spinach

1 teaspoon fresh basil, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving

A squeeze of lemon juice

Instructions

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.

Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 1 minute).

Add the Vegetables: Toss in the spiralized zucchini and cherry tomatoes. Sauté for 3-4 minutes until the tomatoes soften and the zucchini becomes tender but still slightly crisp.

Combine Everything: Add the cooked spaghetti to the skillet, along with the spinach and reserved pasta water. Toss everything together for 2-3 minutes until the spinach wilts and the spaghetti is coated in the sauce.

Season: Stir in fresh basil, season with salt and pepper, and add a squeeze of lemon juice for brightness. Mix well.

Serve: Plate the spaghetti and garnish with grated Parmesan cheese on top.
