2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons vegetable oil

2 large onions, finely chopped

4 cloves garlic, minced

2 tablespoons paprika (sweet or smoked)

1 teaspoon caraway seeds (optional)

1 bell pepper, diced (red or green)

3 medium carrots, sliced

4 medium potatoes, diced

4 cups beef broth

1 tablespoon tomato paste

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.

    Add the beef cubes in batches, browning them on all sides. Remove and set aside when browned.

      In the same pot, add the chopped onions and sauté until translucent, about 5 minutes.

        Stir in the minced garlic, paprika, and caraway seeds, cooking for an additional minute, until fragrant.

          Bring the browned beef back into the pot, along with the diced bell pepper, carrots, and potatoes.

            Add the beef broth and tomato paste, stirring well to combine.

              Throw in the bay leaf and season with salt and pepper. Bring the mixture to a gentle boil.

                Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender and the flavors meld together. Stir occasionally.
