4 cups water

4 tablespoons green tea leaves (ideally, Kashmiri tea leaves)

1 teaspoon baking soda

2 cups milk (or a mix of milk and cream for a richer taste)

1-2 tablespoons sugar (adjust to taste)

1 teaspoon cardamom powder

Salt to taste (a pinch)

Chopped nuts for garnish (pistachios, almonds)

A few saffron strands (optional)

Instructions
 

In a heavy-bottomed pot, bring 4 cups of water to a boil.

    Once the water is boiling, add the green tea leaves and baking soda. The baking soda will help enhance the pink color of the chai.

      Lower the heat and let it simmer for about 10-15 minutes. The liquid will reduce and turn a deep reddish-brown hue.

        Strain the tea using a fine sieve into another pot. Discard the leaves and return the strained tea to the heat.

          Gradually pour in the milk (or the milk and cream mixture), adjusting the quantity based on how rich you want your chai. Stir well.

            Add sugar, cardamom powder, and a pinch of salt. Allow the chai to simmer for another 5-10 minutes, stirring continuously until it reaches the desired color (light pink).

              If using saffron, add it at this stage for an extra fragrant and luxurious touch.

                Serve hot, garnished with chopped nuts on top.
