Ingredients

2 ripe avocados

4 slices of whole-grain bread

4 large eggs

1 teaspoon lemon juice

1/4 teaspoon garlic powder

Salt and black pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh herbs (like cilantro or chives) for garnish

Olive oil for drizzling

Optional toppings: cherry tomatoes, radishes, or feta cheese

Instructions

Begin by toasting the slices of whole-grain bread until golden brown and crispy. This can be done in a toaster or on a skillet over medium heat.

While the bread is toasting, prepare the avocado spread. In a medium bowl, mash the ripe avocados with a fork until creamy. Add the lemon juice, garlic powder, salt, and black pepper, mixing well to combine.

Bring a medium pot of water to a gentle simmer over medium heat. Crack each egg into a small bowl, then slowly slide the eggs into the simmering water one by one.

Poach the eggs for about 3-4 minutes, until the whites are set but the yolks remain runny. If needed, use a slotted spoon to gently nudge the eggs so they don’t stick to the bottom of the pot.

Once cooked, remove the poached eggs and place them on a plate lined with paper towels to absorb any excess water.

Assemble the toast: spread a generous layer of the avocado mixture over each slice of toasted bread.

Carefully place a poached egg on top of each slice of avocado toast.

Drizzle with a touch of olive oil and sprinkle with red pepper flakes (if using) for an extra kick.

Garnish with fresh herbs and any optional toppings you desire, such as halved cherry tomatoes or thinly sliced radishes.
