2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, chilled and cubed

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled (about 6 slices)

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk until well blended.

      Add the chilled, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

        Stir in the shredded cheddar cheese and crumbled bacon until evenly distributed.

          Pour in the buttermilk and mix gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few flour streaks are fine.

            Turn the dough out onto a lightly floured surface, and gently knead it 2-3 times to bring it together. Pat the dough into a rectangle about 1-inch thick.

              Using a biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet. Gather any scraps of dough and repeat until all dough is used.

                For an extra touch, brush the tops of the biscuits with melted butter and sprinkle with additional shredded cheese if desired.

                  Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on the tops.

                    Allow to cool slightly before serving, and enjoy warm!
