Ingredients
  

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup crumbled cooked bacon (about 5 strips)

1/4 cup finely chopped fresh jalapeños (seeds removed for less heat)

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1 cup breadcrumbs (Panko for extra crunch)

1 cup all-purpose flour

2 large eggs, beaten

Oil for frying

Salt and pepper to taste

Instructions
 

In a mixing bowl, combine the softened cream cheese, cheddar cheese, cooked bacon, chopped jalapeños, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.

    Using your hands, form the cheese mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper and freeze for about 30 minutes or until firm.

      While the cheese balls are freezing, set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

        Preheat your oil in a deep fryer or a large pot to 350°F (175°C).

          Take the cheese balls out of the freezer. Roll each ball in the flour, dip in the beaten eggs, then coat with breadcrumbs. Make sure they are fully covered.

            Working in batches, carefully drop the coated cheese balls into the hot oil. Fry for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.

              Serve the bacon jalapeño popper cheese balls warm, with your choice of dipping sauce (ranch or spicy mayo works great!).
