2 filet mignon steaks (6-8 oz each)

4 slices of thick-cut bacon

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

2 tablespoons unsalted butter

Optional: fresh thyme for garnish

Prepare the Steaks: Remove the filet mignon steaks from the refrigerator and let them come to room temperature for about 30 minutes. Preheat your oven to 400°F (200°C).

    Wrap the Bacon: Season each steak generously with salt and black pepper. Take 2 slices of bacon and wrap them around each filet, securing the ends with toothpicks if necessary. Make sure the bacon is snug but not too tight.

      Sear the Steaks: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the wrapped filets to the skillet, cooking for about 3-4 minutes on each side until the bacon is crispy and browned.

        Add Flavor: Once seared, add the minced garlic and chopped rosemary to the skillet, followed by the butter. As it melts, use a spoon to baste the steaks with the garlicky, buttery mixture for extra flavor.

          Bake: Transfer the skillet to the preheated oven. Bake for about 6-10 minutes for medium-rare (internal temperature of 130°F / 54°C), or until your preferred doneness is reached. Keep in mind that the steaks will continue to cook slightly after being removed from the oven.

            Rest and Serve: Once done, allow the filets to rest for 5 minutes. Remove the toothpicks, if used, and garnish with fresh thyme. Serve with your favorite sides, such as roasted vegetables or a creamy potato mash.
