4 everything bagels, diced

8 large eggs

2 cups milk (whole or 2%)

1 cup shredded cheddar cheese

1/2 cup cooked bacon or sausage, crumbled

1/2 cup diced green bell pepper

1/2 cup diced red onion

1 teaspoon garlic powder

Salt and pepper to taste

Fresh chives for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray.

    In a large bowl, whisk together the eggs and milk until well combined. Season with garlic powder, salt, and pepper.

      In the greased baking dish, evenly distribute the diced bagels, followed by layering on the cooked bacon (or sausage), green bell pepper, and red onion.

        Pour the egg mixture over the bagel mixture, ensuring everything is well coated. Gently stir to evenly distribute the ingredients.

          Top with shredded cheddar cheese, spreading it evenly across the casserole.

            Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the middle and the cheese is golden and bubbling.
