1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

2 large eggs

1 cup brewed espresso, cooled

1 teaspoon vanilla extract

1 cup heavy whipping cream

3 tablespoons powdered sugar

½ teaspoon espresso powder (optional for extra flavor)

Dark chocolate shavings for garnish

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking soda, and salt.

      Add the softened butter, eggs, cooled espresso, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed until combined and smooth, about 2-3 minutes.

        Divide the batter evenly between the prepared cake pans.

          Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

            While the cakes are cooling, prepare the espresso cream. In a mixing bowl, pour in the heavy whipping cream and begin to whip on medium speed. Gradually add the powdered sugar and espresso powder (if using) until soft peaks form.

              Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of espresso cream on top. Place the second cake layer on top and spread the remaining cream over the top and sides of the cake.

                For a decorative touch, use a spatula to create soft peaks in the espresso cream. Finish by garnishing with dark chocolate shavings on top.
