Ingredients
  

8 oz (225g) pasta of your choice (penne or fusilli work great)

1 block (8 oz) feta cheese, preferably in olive oil

1 pint (about 2 cups) cherry tomatoes, halved

4 cloves garlic, minced

1 tsp red pepper flakes (adjust to taste)

1/4 cup extra virgin olive oil

1/2 cup fresh basil leaves, chopped

Salt and pepper to taste

Grated Parmesan cheese (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large, oven-safe baking dish, combine the halved cherry tomatoes and minced garlic. Drizzle with olive oil, and sprinkle with red pepper flakes, salt, and pepper. Toss to coat.

      Add the Feta: Place the block of feta cheese in the center of the baking dish among the tomatoes. Drizzle a little extra olive oil over the feta.

        Bake: Bake in the preheated oven for about 30 minutes, or until the tomatoes have burst and the feta is soft and golden.

          Cook the Pasta: While the cheese and tomatoes are baking, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.

            Combine Everything: Once the feta and tomatoes are done, remove the dish from the oven. Using a fork, mash the feta and mix it with the tomatoes to create a creamy sauce. Add the cooked pasta and toss to combine. If the sauce is too thick, gradually add some of the reserved pasta water until the desired consistency is reached.

              Finish and Serve: Stir in the fresh basil leaves and adjust the seasoning if necessary. Serve hot, topped with grated Parmesan cheese if desired.
