Ingredients

4 salmon fillets (6 oz each)

1 bunch of asparagus, trimmed

2 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Lemon slices for garnish

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C).

Tear off four large pieces of aluminum foil, each about 12 inches long, and place them on a baking sheet.

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried thyme, oregano, salt, and pepper.

Arrange 1 salmon fillet in the center of each piece of foil.

Divide the trimmed asparagus evenly among the fillets, placing them alongside the salmon.

Drizzle the prepared olive oil mixture over the salmon and asparagus, ensuring everything is coated well.

Fold the sides of the foil up and over the salmon and asparagus to create a sealed packet.

Place the baking sheet with the foil packets in the preheated oven and bake for 15-20 minutes, until the salmon is cooked through and flakes easily with a fork.

Carefully open the foil packets (watch out for steam) and transfer the contents to serving plates.

Garnish each serving with lemon slices and chopped parsley before serving.
