Ingredients

4 salmon fillets (6 oz each)

1 pound fresh asparagus, trimmed

3 tablespoons olive oil

1 lemon, zested and juiced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C).

Cut four large pieces of heavy-duty aluminum foil, about 12x16 inches each.

In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, smoked paprika, salt, and pepper.

Place a salmon fillet on the center of each piece of foil.

Arrange a bundle of asparagus next to each salmon fillet.

Drizzle the herb mixture evenly over the salmon and asparagus, ensuring everything is well coated.

Gather the foil edges, creating a pouch by folding the edges together tightly, sealing in all the flavors.

Place the foil packets onto a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Carefully open the foil packets (watch out for steam) and transfer the salmon and asparagus to plates.

Garnish with chopped fresh parsley before serving.
