1 pound large shrimp, peeled and deveined

1 cup cooked white rice

1 cup broccoli florets (fresh or frozen)

1 cup bell pepper, diced (red or yellow)

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup panko breadcrumbs

4 tablespoons unsalted butter, melted

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: To 350°F (175°C).

    Prepare the shrimp: In a large bowl, combine the shrimp, cooked rice, broccoli, bell pepper, cherry tomatoes, and half of the shredded cheese.

      Create the mixture: In a separate bowl, mix the mayonnaise, Dijon mustard, garlic powder, onion powder, paprika, salt, and pepper. Stir this mixture into the shrimp and vegetable blend until evenly coated.

        Combine and layer: Transfer the shrimp mixture into a greased 9x13 inch baking dish. Spread it evenly across the dish and sprinkle the remaining cheese on top.
