4 bone-in, skin-on chicken thighs

1 cup balsamic vinegar

1/4 cup honey

4 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh thyme sprigs (for garnish, optional)

Instructions
 

Marinate the Chicken: In a bowl, whisk together balsamic vinegar, honey, minced garlic, Dijon mustard, dried thyme, salt, and pepper. Reserve about 1/4 cup of the marinade for later use. Place the chicken thighs in a large zip-top bag or shallow dish, pour the marinade over, ensuring the chicken is well-coated. Seal or cover, then refrigerate for at least 1 hour (up to overnight for deeper flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Chicken: In an oven-safe skillet, heat olive oil over medium-high heat. Remove chicken from the marinade and shake off excess. Place the chicken thighs skin-side down in the skillet. Sear for 5-7 minutes until the skin is crispy and golden brown. Flip the chicken and sear the other side for 3-4 minutes.

        Add the Marinade: Pour the reserved marinade over the chicken thighs. Use a spoon to baste the chicken with the sauce.

          Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C) and the glaze is bubbling and thickened.

            Serve: Remove the skillet from the oven, let the chicken rest for a few minutes. Garnish with fresh thyme sprigs if desired, and serve with your favorite sides like roasted vegetables or mashed potatoes.
