Ingredients

2 ripe bananas, mashed

1 ½ cups cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 tablespoon lemon juice

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup brown sugar

1 teaspoon cinnamon

Optional: Sliced bananas and whipped cream for garnish

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C).

Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, brown sugar, and cinnamon. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Prepare the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue to beat until well combined.

Incorporate the Eggs: Add the eggs, one at a time, mixing well after each addition. Stir in the mashed bananas, lemon juice, and vanilla extract until everything is smoothly blended.

Bake the Cheesecake: Pour the banana cream cheese mixture over the prepared crust in the springform pan. Tap the pan gently on the counter to remove any air bubbles. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool Down: Turn off the oven, crack the oven door, and allow the cheesecake to cool in the oven for 1 hour. Then, remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight to fully set.

Serve: Once chilled, run a knife around the edge of the springform pan before releasing the sides. Slice the cheesecake and serve with fresh banana slices and a dollop of whipped cream, if desired.
