1 cup ripe bananas (about 2 medium, mashed)

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup vanilla pudding mix (instant)

1 cup white chocolate chips (or chopped pecans for crunch)

1/2 cup crushed Nilla Wafers (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the mashed bananas, egg, and vanilla extract, mixing until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and vanilla pudding mix until evenly combined.

        Blend Dry & Wet Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. Gently fold in the white chocolate chips.

          Scoop the Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spaced about 2 inches apart. Optionally, sprinkle crushed Nilla Wafers on top of each cookie for added texture.

            Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers remain soft.
