Ingredients

For the Cupcakes:

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup mashed ripe bananas (about 2 large bananas)

½ cup buttermilk

For the Caramelized Banana Filling:

2 ripe bananas, sliced

2 tablespoons unsalted butter

¼ cup brown sugar

1 teaspoon vanilla extract

Pinch of salt

For the Banana Pudding Frosting:

1 cup heavy cream

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup banana pudding (prepared from instant mix or homemade)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).

Incorporate Eggs and Bananas: Beat in the eggs one at a time, then add the vanilla extract and mashed bananas until well combined.

Combine Mixtures: Gradually mix in the dry ingredients alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.

Bake Cupcakes: Divide the batter among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Prepare Caramelized Banana Filling: In a skillet over medium heat, melt the butter. Add the sliced bananas and brown sugar, cooking for 2-4 minutes, stirring gently until the bananas are caramelized and soft. Remove from heat and stir in vanilla and a pinch of salt. Let cool slightly.

Make Frosting: In a mixing bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Gently fold in the prepared banana pudding until fully incorporated.

Assemble Cupcakes: Once the cupcakes have cooled, use a cupcake corer or a small knife to remove a small portion of the center from each cupcake. Fill each cavity with the caramelized banana filling.

Frost and Decorate: Using a piping bag, frost the tops of the cupcakes with the banana pudding frosting. Optionally, garnish with additional caramelized banana slices or crushed vanilla wafers.

Serve and Enjoy: Serve the cupcakes at room temperature or chilled, and enjoy the delightful taste of banana pudding in every bite!
