Ingredients

1 cup all-purpose flour

1/4 cup powdered sugar

1/4 teaspoon salt

4 tablespoons unsalted butter, melted

1 large egg

2 tablespoons milk

1 teaspoon vanilla extract

2 medium ripe bananas, sliced

1 cup vanilla pudding (store-bought or homemade)

1/2 cup whipped cream

1/4 cup crushed vanilla wafers

Fresh mint leaves for garnish (optional)

Instructions

In a mixing bowl, combine the flour, powdered sugar, and salt. Whisk together until well-blended.

In a separate bowl, mix the melted butter, egg, milk, and vanilla extract until smooth.

Gradually add the wet ingredients to the dry ingredients, mixing until a smooth batter forms.

Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a little butter.

Pour about 2 tablespoons of batter into the skillet to form small, taco-shaped shells. Cook for about 1-2 minutes on each side until lightly golden brown and set. Repeat with remaining batter, setting the shells aside to cool.

Once the taco shells have cooled, fill each shell with a layer of vanilla pudding, followed by a few banana slices.

Top with a generous dollop of whipped cream and sprinkle crushed vanilla wafers over the top for added crunch.

Garnish with fresh mint leaves if desired and serve immediately.
