Ingredients

1 pound boneless chicken thighs, cut into 1-inch cubes

2 tablespoons soy sauce

1 teaspoon garlic powder

1 teaspoon ginger powder

2 tablespoons cornstarch

1 tablespoon vegetable oil

1/4 teaspoon salt

1/4 teaspoon black pepper

Skewers (wooden or metal)

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for heat preference)

1 teaspoon honey

1 teaspoon lime juice

Chopped green onions, for garnish

Instructions

Marinate the Chicken: In a mixing bowl, combine the soy sauce, garlic powder, ginger powder, salt, pepper, and vegetable oil. Add the chicken cubes and toss to coat well. Marinate for at least 30 minutes, preferably 1-2 hours in the refrigerator.

Prepare Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning.

Coat Chicken: After marination, sprinkle the cornstarch over the chicken pieces and toss until all pieces are evenly coated. This will help achieve a crispy texture when cooked.

Assemble Skewers: Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

Grill the Skewers: Preheat your grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

Make the Bang Bang Sauce: While the chicken is grilling, mix the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl until well combined. Adjust the seasoning or spice level to your liking.

Serve: Once the chicken is cooked, remove from the grill and place on a serving platter. Drizzle the Bang Bang sauce generously over the chicken skewers or serve it on the side for dipping.

Garnish: Sprinkle chopped green onions over the skewers for a pop of color and added flavor.
