6 large eggs

3 tablespoons mayonnaise

1 tablespoon Sriracha sauce (adjust to taste)

1 teaspoon Dijon mustard

1 teaspoon rice vinegar

Salt and pepper to taste

2 tablespoons finely chopped green onions

1 tablespoon sweet chili sauce

1 teaspoon sesame oil

Crushed red pepper flakes for garnish (optional)

Instructions
 

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot and remove it from the heat. Let sit for 12-15 minutes, then transfer eggs to an ice-water bath to cool.

    Peel the Eggs: Once the eggs are cool to touch, gently tap them on a hard surface to crack the shell, then peel under running water to make it easier.

      Prepare Egg Filling: Cut each egg in half lengthwise and carefully remove the yolks with a spoon. Place the yolks in a mixing bowl and set the egg whites aside.

        Mix Ingredients: Add mayonnaise, Sriracha sauce, Dijon mustard, rice vinegar, salt, and pepper to the egg yolks. Mash everything together with a fork until smooth and creamy. Adjust the spice level of the filling by adding more Sriracha if desired.

          Add Flavors: Stir in the finely chopped green onions, sweet chili sauce, and sesame oil to the yolk mixture. Mix until well combined.

            Fill the Eggs: Spoon or pipe the yolk mixture back into the hollowed egg whites. You can use a plastic bag with a corner cut off for a piping effect.

              Garnish: Sprinkle crushed red pepper flakes on top for an extra kick if desired, and add a sprinkle of more green onions for freshness.

                Serve: Chill in the refrigerator for at least 30 minutes before serving for flavors to meld.
