1 pound shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper

Salt and pepper, to taste

Vegetable oil, for frying

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1-2 tablespoons sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon lime juice

Marinate the Shrimp: In a bowl, soak the shrimp in buttermilk for at least 30 minutes to tenderize and flavor.

    Set up Dredging Stations: In three shallow dishes, place flour seasoned with salt, pepper, garlic powder, onion powder, paprika, and cayenne in one dish, beaten eggs (optional, for extra crunch) in the second, and panko breadcrumbs in the third.

      Dredge the Shrimp: Remove shrimp from the buttermilk, allowing excess to drip off. Dredge each shrimp first in the seasoned flour, then dip in the egg (if using), and finally coat in panko breadcrumbs, pressing gently to adhere.

        Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth. Adjust sriracha for desired spiciness.

          Fry the Shrimp: Heat vegetable oil in a deep skillet or heavy-bottomed pot over medium-high heat. Once hot (about 350°F), carefully add the shrimp in batches, frying for about 2-3 minutes on each side until golden and crispy. Remove and drain on paper towels.

            Combine Shrimp with Sauce: In a large mixing bowl, toss the hot fried shrimp with half the Bang Bang sauce until evenly coated.

              Serve: Arrange the coated shrimp on a serving platter, drizzling the remaining sauce on top or serving it on the side for dipping.
