Ingredients

1 pound large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper

Salt and pepper to taste

Oil for frying (vegetable or canola)

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 teaspoon Sriracha (adjust for heat)

1 teaspoon lime juice

1 tablespoon honey

Instructions

Marinate the Shrimp: In a medium bowl, soak the shrimp in buttermilk for at least 30 minutes to tenderize and flavor.

Prepare the Coating: In another bowl, mix together flour, cornstarch, garlic powder, paprika, cayenne pepper, salt, and pepper until well combined.

Coat the Shrimp: Remove shrimp from the buttermilk, letting excess drip off. Dredge each shrimp in the flour mixture, ensuring it is fully coated. Shake off any excess flour.

Heat the Oil: In a large skillet or deep fryer, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp: Carefully place the coated shrimp in the hot oil, frying in small batches to avoid overcrowding. Fry for 2-3 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer the cooked shrimp to a paper towel-lined plate.

Make the Bang Bang Sauce: While the shrimp are frying, combine mayonnaise, sweet chili sauce, Sriracha, lime juice, and honey in a bowl. Whisk until smooth.

Toss the Shrimp: Once all shrimp are cooked, place them in a large bowl. Drizzle half of the Bang Bang sauce over them and toss gently to coat. Reserve the other half of the sauce for serving.

Serve: Plate the crispy Bang Bang shrimp on a serving platter, drizzling additional sauce on top.
