8 oz spaghetti or linguine pasta

1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup breadcrumbs (preferably panko)

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

2 tablespoons olive oil

3 cloves garlic, minced

2 green onions, sliced (for garnish)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Prepare the Shrimp: In a shallow dish, pour the buttermilk over the shrimp and let them soak for about 15 minutes.

      Coat the Shrimp: In another shallow dish, spread the breadcrumbs. Remove the shrimp from the buttermilk one at a time, allowing excess to drip off, and then coat each shrimp in the breadcrumbs, pressing gently to adhere.

        Cook the Shrimp: In a large skillet, heat olive oil over medium-high heat. Once hot, add the shrimp in batches without overcrowding the skillet. Cook for about 2-3 minutes on each side or until they are golden brown and cooked through. Remove shrimp from the skillet and set aside.

          Make the Sauce: In a small bowl, mix the mayonnaise, sweet chili sauce, sriracha, salt, and pepper until well combined. Taste and adjust heat and seasonings as desired.

            Combine Pasta and Shrimp: In the skillet (remove excess oil if necessary), add the minced garlic and sauté for about 30 seconds until fragrant. Add the cooked pasta and reserved pasta water, tossing to coat. Add the cooked shrimp and drizzle the bang bang sauce over everything. Toss gently until well combined and heated through.

              Serve: Divide the pasta and shrimp among plates and garnish with sliced green onions and fresh cilantro.
