6 pork sausages (your choice of spiced or herbed)

4 large russet potatoes, peeled and cubed

1/2 cup heavy cream

4 tablespoons unsalted butter

1 cup onion, finely chopped

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce (optional)

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Prepare the Potatoes: Place the cubed potatoes in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and set aside.

    Cook the Sausages: In a large skillet over medium heat, add a drizzle of olive oil. Place the sausages in the skillet and cook, turning occasionally, until browned and cooked through (about 10-12 minutes). Remove from the skillet and keep warm.

      Sauté Onions: In the same skillet, add a tablespoon of butter. Add the chopped onions and garlic, sautéing until the onions are caramelized and soft, about 5-7 minutes. Sprinkle with a pinch of salt to enhance the flavor.

        Make the Mash: In a large pot, mash the drained potatoes. Add in the heavy cream, the remaining butter, Dijon mustard, and season generously with salt and pepper. Mix until smooth and creamy. Adjust seasoning if necessary.

          Combine and Add Flavor: Once the onions are cooked, return the sausages to the skillet. Drizzle with Worcestershire sauce if using, tossing the sausages with the onions to coat them well in flavor.
