6 pork sausages (preferably herby)

4 large Yukon Gold potatoes, peeled and diced

1 cup whole milk

4 tablespoons unsalted butter

1 tablespoon olive oil

1 large onion, thinly sliced

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Cook the Sausages: Heat the olive oil in a large skillet over medium heat. Add the sausages and cook for about 12-15 minutes, turning occasionally until they are golden brown and cooked through. Remove from skillet and set aside.

    Prepare the Mashed Potatoes: While the sausages are cooking, fill a large pot with water and add the diced potatoes. Bring to a boil and cook for about 15-20 minutes until tender. Drain and return the potatoes to the pot.

      Mash the Potatoes: Add the butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm on low heat.

        Make the Onion Gravy: In the same skillet used for the sausages, add the sliced onions and cook over medium-low heat for 10 minutes until caramelized. Stir in the minced garlic and cook for another minute.

          Combine Flavors: Add the Dijon mustard and Worcestershire sauce to the onions, mixing well. Pour in about 1 cup of water (or enough to achieve your desired gravy thickness) and simmer for 5 minutes, adjusting seasoning with salt and pepper.

            Serve: On a plate, create a bed of creamy mashed potatoes. Top generously with sausages and spoon the onion gravy over the sausages and potatoes.
