4 fresh sausages (pork, chicken, or plant-based)

4 medium-sized potatoes, peeled and cubed

1 cup milk

2 tablespoons butter

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 cup onion, finely sliced

1 tablespoon olive oil

1 tablespoon Dijon mustard

Salt and pepper to taste

Prepare the Potatoes: Place the peeled and cubed potatoes in a large pot, cover with water, and sprinkle in a pinch of salt. Bring to a boil over high heat and cook for about 15-20 minutes, or until soft.

    Cook the Sausages: While the potatoes are cooking, heat a skillet over medium heat and add the olive oil. Add the sausages and cook for about 10-12 minutes, turning occasionally until golden brown and cooked through.

      Sauté the Onions: In the same skillet after removing the sausages, add the sliced onions. Cook them over medium heat until they are soft and slightly caramelized, about 6-8 minutes. Stir in the garlic powder and smoked paprika, and cook for an additional minute.

        Mash the Potatoes: Once the potatoes are cooked, drain them and return to the pot. Add butter and milk, and mash until smooth. Stir in the Dijon mustard and season with salt and pepper to taste.
