4 pork sausages (or your choice of sausage)

4 large potatoes, peeled and chopped

1/2 cup milk

4 tablespoons butter

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons all-purpose flour

2 cups chicken or vegetable broth

1 tablespoon fresh parsley, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

Instructions
 

Cook the Potatoes: In a large pot, cover the chopped potatoes with cold water, add a pinch of salt, and bring to a boil. Cook for 15-20 minutes or until tender. Drain and return to the pot.

    Mash the Potatoes: Add the milk and 2 tablespoons of butter to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside and keep warm.

      Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook for about 12-15 minutes, turning occasionally, until evenly browned and cooked through. Remove and keep warm.

        Make the Gravy: In the same skillet, add the remaining 2 tablespoons of butter and the chopped onion. Cook for about 3-4 minutes until soft. Stir in the minced garlic and cook for another minute.

          Thicken the Gravy: Sprinkle the flour over the onion and garlic mixture, stirring continuously for 1-2 minutes. Gradually whisk in the broth, making sure to prevent any lumps. Bring to a simmer and let it thicken for about 5 minutes. Add the chopped parsley, thyme, and season with salt and pepper.

            Serve: On a large plate, spoon a generous amount of mashed potatoes, place the sausages on top, and pour the garlic herb gravy over everything.
