To make bangers and mash with onion gravy, you need a few key ingredients. First, you must have sausages. I prefer using six pork sausages. A mix of sweet and spicy types works best. This gives the dish a nice balance of flavors.

Ingredients

6 pork sausages (preferably a mix of sweet and spicy)

4 large russet potatoes, peeled and cubed

1/2 cup whole milk

4 tablespoons unsalted butter

Salt and pepper to taste

2 large onions, thinly sliced

2 tablespoons olive oil

2 tablespoons flour

2 cups beef or vegetable stock

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Mash: Place the peeled and cubed potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.

Cook the Sausages: While the potatoes are cooking, heat a large skillet over medium heat. Add the sausages and cook until browned on all sides, approximately 12-15 minutes. Once cooked, remove from skillet and set aside.

Make the Onion Gravy: In the same skillet, add olive oil and sliced onions. Sauté on medium-low heat until they're caramelized and golden brown, about 10-12 minutes. Stir occasionally to prevent burning.

Thicken the Gravy: Sprinkle flour over the onions and stir well to combine. Cook for another minute to remove the raw flour taste. Gradually whisk in the beef or vegetable stock and Worcestershire sauce. Bring to a simmer, and let it cook until thickened, about 5-7 minutes. Add salt and pepper to taste.

Finish the Mash: Drain the cooked potatoes and return them to the pot. Add butter and warm milk. Mash until smooth and creamy. Season with salt and pepper to your liking.

Serve: Arrange a generous scoop of mashed potatoes on each plate, top with a few sausages, and drizzle with rich onion gravy.

Garnish: Sprinkle freshly chopped parsley over the top for a pop of color and added flavor.
