2 cups cooked chicken breast, shredded

1 cup barbecue sauce (your favorite brand)

4 cups mixed greens (e.g., arugula, romaine, spinach)

1 cup cherry tomatoes, halved

1 cup corn (canned or grilled)

1/2 red onion, thinly sliced

1 avocado, diced

1/4 cup cilantro, chopped

1/2 cup shredded cheddar cheese

1/4 cup crumbled tortilla chips (for crunch)

Salt and pepper to taste

Optional: lime wedges for serving

Instructions
 

In a medium bowl, combine the shredded chicken with the barbecue sauce, tossing to coat well. If time allows, let it marinate for 30 minutes for deeper flavor.

    While the chicken is marinating, prepare the salad base: in a large mixing bowl, combine the mixed greens, cherry tomatoes, corn, red onion, and cilantro. Toss gently to mix.

      If you’re using canned corn, drain and rinse it under cold water before adding to the salad. For grilled corn, you can cut the kernels off the cob after grilling.

        Once the chicken has marinated, warm it up in a skillet over medium heat until heated through (about 5 minutes).

          Add the warm BBQ chicken to the salad and gently toss everything together, being careful not to mash the avocado.

            Season with salt and pepper to taste, and top with diced avocado and shredded cheddar cheese.

              Just before serving, sprinkle with crumbled tortilla chips for added crunch.

                Serve with lime wedges on the side for an extra zesty kick.
