Ingredients
  

1 lb large shrimp, peeled and deveined

8 slices of thick-cut bacon

1 ripe peach, pitted and cut into 1-inch cubes

1/2 cup BBQ sauce (your choice)

1/4 cup sweet chili sauce

1 tablespoon honey

Juice of 1 lime

Salt and pepper, to taste

Skewers (soaked in water for 30 minutes if wooden)

Instructions
 

Prepare the Shrimp: In a bowl, combine shrimp with BBQ sauce, sweet chili sauce, honey, lime juice, salt, and pepper. Mix well and let marinate for at least 30 minutes.

    Cook the Bacon: Preheat your grill or oven to 400°F (200°C). While the shrimp is marinating, partially cook the bacon slices on a skillet over medium heat for about 3-4 minutes, just until they start to render fat but are not fully crispy. Remove from heat and let cool slightly.

      Assemble Kabobs: Take a skewer and thread a piece of bacon onto it, followed by a shrimp, and then a cube of peach. Wrap the bacon around the shrimp and peach, securing it to the skewer. Repeat this process until all ingredients are used.

        Grill the Kabobs: Place the assembled skewers on the preheated grill. Cook for about 3-4 minutes on each side or until the shrimp is pink and opaque, and the bacon is crispy. Brush additional BBQ sauce on during the last minute of grilling for extra flavor.

          Serve: Remove from the grill and let cool for a minute. Serve hot with additional sweet chili sauce on the side for dipping.
