1 can (400g) of butter beans or cannellini beans, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 tablespoon tomato paste

200ml vegetable broth

Salt and pepper to taste

4 slices of whole-grain bread

Fresh parsley or chives, chopped (for garnish)

Optional: Crumbled feta cheese or avocado for topping

Instructions
 

Sauté the Aromatics: In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

    Add the Spices: Stir in the smoked paprika and ground cumin, stirring for about 30 seconds to enhance their flavors.

      Cook the Beans: Add the drained beans and tomato paste to the saucepan. Stir everything together to coat the beans in the spices. Pour in the vegetable broth, and bring the mixture to a simmer. Reduce heat and let it cook for 10 minutes, allowing the flavors to meld. Use a fork to lightly mash some of the beans, creating a thicker sauce. Season with salt and pepper to taste.
