Beef and Barley Soup

Ingredients
  

1 lb (450g) beef chuck, cut into 1-inch cubes

1 cup pearl barley, rinsed

4 cups beef broth

2 cups water

1 medium onion, diced

2 carrots, sliced

2 stalks celery, diced

3 cloves garlic, minced

1 tsp dried thyme

1 tsp dried rosemary

2 bay leaves

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides for about 5-7 minutes. Remove the beef and set aside.

    In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes or until the vegetables begin to soften.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Return the browned beef to the pot and add the pearl barley, beef broth, water, thyme, rosemary, bay leaves, salt, and pepper. Stir well to combine.

          Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked.

            Remove the bay leaves and taste the soup for seasoning, adjusting salt and pepper as needed.

              Serve hot, garnished with chopped fresh parsley for a touch of color and freshness.
