2 lbs beef chuck, cut into 1-inch cubes

4 slices of bacon, chopped

2 medium onions, diced

3 cloves garlic, minced

4 carrots, sliced

2 cups beef broth

1 cup grape juice (as a wine substitute)

1 tablespoon tomato paste

2 teaspoons dried thyme

2 bay leaves

2 tablespoons flour

8 oz mushrooms, sliced

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

In a large Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Increase the heat and add the beef cubes to the pot, browning them on all sides. Work in batches if necessary to avoid overcrowding. Remove the browned beef and set aside.

      In the same pot, add the diced onions and minced garlic. Sauté until onions are translucent, about 5 minutes.

        Stir in the sliced carrots and cook for another 5 minutes until they soften slightly.

          Sprinkle the flour over the vegetables and stir to combine for about 1 minute, allowing the flour to cook slightly.

            Gradually add the beef broth and grape juice, scraping the bottom of the pot to deglaze it and remove any stuck bits.

              Return the browned beef and cooked bacon to the pot. Add the tomato paste, dried thyme, bay leaves, and season with salt and pepper. Stir well to combine.

                Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for about 2 hours, stirring occasionally until the beef is tender.

                  In the last 30 minutes of cooking, add the sliced mushrooms and continue simmering.

                    Once cooked, remove the bay leaves, taste, and adjust seasoning if necessary.

                      Serve hot, garnished with fresh parsley.
