Ingredients
  

12 oz fresh or frozen beef tortellini

1 lb ground beef

1 cup grated Parmesan cheese

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (drained)

1 cup beef broth

1 tbsp Italian seasoning

1 tsp red pepper flakes (optional)

2 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Prepare the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually about 3-5 minutes for fresh or 7-9 minutes for frozen. Drain and set aside.

    Cook the Beef: In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.

      Brown the Meat: Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Stir frequently, about 5-7 minutes.

        Combine Ingredients: Once the ground beef is fully cooked, season with Italian seasoning, red pepper flakes, salt, and pepper. Add the drained diced tomatoes and beef broth, mixing well. Let the mixture simmer for about 5 minutes to enhance the flavors.

          Add Tortellini & Cheese: Gently fold the cooked tortellini into the beef mixture, mixing until well coated. Sprinkle the grated Parmesan cheese on top, stir gently, and let it cook for an additional 2-3 minutes until the cheese melts and becomes creamy.

            Garnish & Serve: Remove from heat, garnish with fresh basil leaves, and serve hot with additional Parmesan on the side if desired.
