1 cup all-purpose flour

1 large egg

1 teaspoon salt

1 tablespoon olive oil

250g ground beef

1/2 cup finely grated Parmesan cheese

1/4 cup ricotta cheese

1 clove garlic, minced

1 teaspoon dried oregano

1/2 teaspoon black pepper

2 cups beef broth

Fresh basil leaves for garnish

Make the Dough: In a mixing bowl, combine the flour and salt. Create a well in the center, and add the egg and olive oil. Gradually mix with your hands or a fork until a consistent dough forms. Knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling: In a skillet over medium heat, cook the ground beef until browned. Add the minced garlic, oregano, and black pepper. Cook for an additional 2-3 minutes. Remove from heat and let it cool slightly. In a bowl, mix the cooled meat with Parmesan and ricotta.

      Roll the Dough: Divide the pasta dough into four pieces. Take one piece and keep the others covered to prevent drying. Roll it out into thin sheets (about 1/16 inch thick) either by hand or using a pasta machine.

        Form the Tortellini: Cut the rolled dough into 3-inch squares. Place a small teaspoon of the beef filling in the center of each square. Fold one corner over to the opposite side to form a triangle and press to seal. Bring the two corners of the triangle together and pinch to form a tortellini shape. Repeat with the remaining dough and filling.

          Cook the Tortellini: Bring a large pot of beef broth to a gentle boil. Carefully drop in the tortellini and cook for 3-5 minutes until they float to the surface and are tender.

            Serve: Use a slotted spoon to transfer the tortellini to a serving dish. Spoon over some of the boiling broth and garnish with fresh basil leaves. Sprinkle with additional Parmesan cheese if desired.
